Bacon Wrapped Roasted Chicken with Sweet Potatoes


  • 10 slices Farmer’s Choice Bacon
  • 1 whole chicken
  • 1 tbsp. butter
  • 3 tbsp. bajan seasoning
  • Salt and pepper to taste
  • Paprika
  • Water or chicken broth
  • Fresh thyme
  • 3 carrots, cut in chunks
  • 2 stalks celery cut into chunks
  • 2 onions cut into 4
  • 4 sweet potatoes


Preheat the oven to 325 degrees F (220 degrees C). Rub butter over the entire chicken. Season with salt, pepper, bajan seasoning and thyme. Place half the carrots, onions and celery inside the cavity, and tie the legs together. Place sweet potatoes and remaining carrots, onions and celery in the bottom of the pan. Sprinkle with salt and pepper and place thyme sticks over potatoes. Place some water or broth in the pan.

Place the chicken breast side up in a roasting pan. Lay Farmer’s Choice Bacon strips across the top of the chicken, and secure with toothpicks. Sprinkle with paprika. Place chicken in oven and roast for 1 hour and 15 minutes, or until the internal temperature is 180 degrees F. Baste every 15 minutes with the broth. Once finished remove from roasting pan and remove toothpicks. Carve and serve with potatoes and carrots.
