- 2 oz. Farmer’s Choice Turkey Ham Chunk (diced)
- 3 eggs
- Parsley (diced)
- 1 oz. onion (diced)
- 1 oz. sweet pepper (diced)
- 1 tsp olive oil
Mix the eggs, salt and pepper and set aside. Heat the oil in a medium nonstick frying pan and cook the peppers and onions for 2 mins. Pour in the eggs and cook over a medium heat until almost completely set.
Sprinkle on the ham and parsley and continue cooking until just set in the centre, turn it over and fold in half. Serve and enjoy.
