Scalloped Sweet Potatoes with Farmer’s Choice Virginia Style Sliced Ham


  • ½-pound Farmer’s Choice Virginia Style Sliced Ham
  • Cooking Spray
  • 3 tbsp. Unsalted Butter
  • 1 large Onion, diced
  • 1 medium Green Pepper
  • 2 sprigs Thyme
  • 2 sprigs Chives
  • 3 tbsp. All-Purpose Flour
  • 2 cloves Garlic, minced
  • Salt
  • Ground Black Pepper
  • ½ tsp. Cayenne Pepper
  • 1 tsp. Complete Seasoning
  • 1 tsp. Mustard Powder
  • 2 cups Regular Milk
  • 1 ½ pounds Sweet Potatoes
  • ½ cup grated Cheddar Cheese
  • 1 cup shredded Mozzarella Cheese


Preheat the oven to 350 degrees F. Spray baking dish with cooking spray or grease with oil. In a skillet over medium heat, melt the butter.

Add the onions, diced green peppers and sauté until translucent for 3 to 4 minutes. Add the flour and stir until combined. Cook for 1 to 2 minutes to remove the raw flour taste. Add the garlic, salt, pepper, cayenne pepper, mustard powder, thyme and chopped chives. Whisk in the milk. Allow to cook and thicken slightly for about 3 minutes. Remove from the heat.

Line the baking dish with a layer of Farmer’s Choice Virginia Style Ham, then a layer of slightly overlapping sweet potatoes followed by 2/3 cup of sauce. Repeat the layering until all the ingredients are used.

Top with cheddar and mozzarella mixed and cover with foil. Bake until the potatoes are tender for about 1 hour. Remove the foil and spoon off any fat that has pooled in the baking dish, if needed.

Broil until light golden brown (3 to 5 minutes). Garnish with green onions before serving.
